Yellow eel noodles are a delicious dish commonly found in noodle shops in Huai'an, Baoying, Yangzhou, Zhenjiang and other places in Jiangsu Province, China, where Huaiyang cuisine is popular. Yellow eel is a widely used ingredient in the region, and its preparation is quite experienced and has the effect of nourishing food. Yellow eel noodles made with it are also very popular among local diners.
